Ingredients

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon ground cinnamon (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat together the sugars, eggs, and oil until smooth and creamy.
  4. Add mashed sweet potatoes and vanilla extract; mix until combined.
  5. Gradually add dry ingredients to wet ingredients, alternating with buttermilk, and mix just until incorporated.
  6. Divide batter evenly between the prepared pans and smooth the tops.
