Description
This easy Taco Casserole is a hearty, family-friendly dinner made with seasoned ground beef, tortilla chips, cheese, and your favorite taco toppings. It’s a quick, comforting weeknight meal that’s packed with Tex-Mex flavor.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
- 1 (15 oz) can black beans, drained and rinsed
- 2 cups crushed tortilla chips
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Optional toppings: shredded lettuce, diced tomatoes, sliced olives, jalapeños, chopped cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Stir in the taco seasoning and water, then add the Rotel tomatoes and black beans. Cook for 5–7 minutes, allowing the mixture to thicken slightly.
- In a 9×13-inch baking dish, layer crushed tortilla chips on the bottom.
- Spoon the beef mixture evenly over the chips, then dollop sour cream over the top.
- Sprinkle shredded cheddar cheese over the entire casserole.
- Bake for 20–25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Top with optional toppings as desired before serving.
Notes
- You can substitute ground turkey or chicken for the beef.
- Adjust the level of spice by choosing mild or hot Rotel and taco seasoning.
- Add corn or bell peppers for extra veggies.
- Best served fresh, but leftovers can be stored in the fridge for 2–3 days.
