Description

This easy Taco Casserole is a hearty, family-friendly dinner made with seasoned ground beef, tortilla chips, cheese, and your favorite taco toppings. It’s a quick, comforting weeknight meal that’s packed with Tex-Mex flavor.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 pound lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1/2 cup water
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional toppings: shredded lettuce, diced tomatoes, sliced olives, jalapeños, chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess fat.
  4. Stir in the taco seasoning and water, then add the Rotel tomatoes and black beans. Cook for 5–7 minutes, allowing the mixture to thicken slightly.
  5. In a 9×13-inch baking dish, layer crushed tortilla chips on the bottom.
  6. Spoon the beef mixture evenly over the chips, then dollop sour cream over the top.
  7. Sprinkle shredded cheddar cheese over the entire casserole.
  8. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  9. Remove from the oven and let cool slightly. Top with optional toppings as desired before serving.

Notes

  • You can substitute ground turkey or chicken for the beef.
  • Adjust the level of spice by choosing mild or hot Rotel and taco seasoning.
  • Add corn or bell peppers for extra veggies.
  • Best served fresh, but leftovers can be stored in the fridge for 2–3 days.
