Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 tablespoon taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 oz) can diced tomatoes
- 1 cup elbow macaroni, uncooked
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, chopped green onions, chopped tomatoes, sliced olives
Instructions
- In a large skillet over medium heat, brown the ground beef with diced onion until the meat is no longer pink. Drain excess grease if necessary.
- Add taco seasoning, salt, and pepper to the skillet. Stir to combine.
- Pour in the diced tomatoes (with juice), elbow macaroni, and beef broth. Stir well.
- Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is tender.
- Remove from heat and stir in shredded cheddar cheese until melted and well combined.
- Serve hot with your favorite taco toppings, such as sour cream, green onions, or olives.
