Description

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 oz) can diced tomatoes
  • 1 cup elbow macaroni, uncooked
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, chopped green onions, chopped tomatoes, sliced olives

Instructions

  1. In a large skillet over medium heat, brown the ground beef with diced onion until the meat is no longer pink. Drain excess grease if necessary.
  2. Add taco seasoning, salt, and pepper to the skillet. Stir to combine.
  3. Pour in the diced tomatoes (with juice), elbow macaroni, and beef broth. Stir well.
  4. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is tender.
