Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar (plus more for rolling)
- 1/4 cup molasses
- 1 large egg
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1/4 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground cardamom
- 1/4 tsp ground allspice
- 1/4 tsp ground black pepper
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and 1 cup sugar until light and fluffy.
- Beat in the molasses and egg until fully combined.
- In a separate bowl, whisk together flour, baking soda, salt, and all spices.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Roll dough into 1-inch balls and coat in granulated sugar.
- Place dough balls on prepared baking sheets, spacing them 2 inches apart.
- Bake for 8–10 minutes until edges are set but centers are soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
