Description

A creamy and naturally sweet chia seed pudding made with blended Medjool dates and plant-based milk, perfect for a nutritious breakfast, snack, or light dessert.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or any plant-based milk)
  • 45 soft Medjool dates, pitted
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • Fresh fruits for topping (optional)
  • Chopped nuts or coconut flakes for garnish (optional)

Instructions

  1. Add almond milk, pitted dates, and vanilla extract to a blender and blend until completely smooth.
  2. Pour the blended mixture into a bowl or jar and stir in the chia seeds and cinnamon.
  3. Mix thoroughly to prevent clumping, let sit for 5 minutes, then stir again.
  4. Cover and refrigerate for at least 4 hours or overnight until thick and pudding-like.
  5. Stir well before serving and add fresh fruits, nuts, or coconut flakes as desired.

Notes

  • For a thicker consistency, add an extra tablespoon of chia seeds.
  • If the pudding becomes too thick, stir in a splash of milk before serving.
