Ingredients

  • 2 lbs beef stew meat or beef chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp tomato paste
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef chunks and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion until translucent. Add garlic and cook for another minute.
  4. Return beef to the pot. Stir in tomato paste, beef broth, Worcestershire sauce, salt, pepper, and paprika.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until beef is tender.
  6. For a thicker sauce, stir in the cornstarch slurry during the last 10 minutes of cooking and simmer until thickened.
