Ingredients

  • 2 teaspoons cornstarch
  • ⅓ cup soy sauce (low sodium)
  • 1 tablespoon mirin
  • 4 to 5 tablespoons honey
  • ¼ cup pineapple juice
  • 1 tablespoon garlic powder
  • 8 to 10 boneless skinless chicken thighs (cut into bite-sized pieces)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup flour (or more as needed)
  • 2 tablespoons olive oil (divided)
  • 1 onion (cut into bite-sized pieces)
  • 1 red bell pepper (cut into bite-sized pieces)
  • 1 cup frozen edamame
  • 1 cup pineapple (cut into bite-sized pieces)
  • 4 cups cooked rice

Instructions

  1. In a mixing bowl, combine cornstarch, soy sauce, honey, pineapple juice, garlic powder, and mirin. Set aside.
  2. Season chicken with salt, pepper, garlic powder, and onion powder. Coat evenly in flour.
  3. Heat a skillet over medium heat and add 1 tablespoon olive oil. Cook chicken in a single layer for about 5 minutes per side until browned and cooked through. Work in batches if needed.
  4. Remove chicken and set aside. Add remaining olive oil to the skillet and sauté onion and bell pepper for 3 to 4 minutes.
  5. Pour in the prepared sauce and simmer for 3 to 4 minutes. Add frozen edamame and cook for another 3 to 4 minutes.
  6. Add pineapple and simmer for 2 to 3 minutes until the sauce thickens to your liking. Return chicken to the skillet and toss to coat.
  7. Serve hot over cooked rice or with your preferred side.

  • Adjust honey for desired sweetness.
  • Chicken breast can be substituted for a leaner option.
