Description

Thai Chicken Satay with Peanut Sauce is a popular Southeast Asian dish featuring marinated grilled chicken skewers served with a rich, creamy, and slightly spicy peanut dipping sauce. Ingredients

  • 1 lb / 500g chicken thigh fillets (skinless, boneless), cut into 2 cm / 4/5” cubes
  • 810 bamboo skewers (soaked in water for 30 minutes)
  • 1 tbsp oil (for cooking)
  • Chicken Marinade:
  • 1 stalk lemongrass (white part only, finely chopped)
  • 2 garlic cloves (minced)
  • 2 tsp ginger (grated)
  • 1 tbsp curry powder
  • 1/2 tsp turmeric powder
  • 2 tbsp brown sugar
  • 2 tbsp fish sauce
  • 3 tbsp soy sauce
  • 2 tbsp coconut milk
  • Peanut Sauce:
  • 1/2 cup smooth peanut butter
  • 1/2 cup coconut milk
  • 1 tbsp red curry paste
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 tsp fish sauce
  • 1 tbsp lime juice
  • 1/2 cup water (adjust for consistency)

Instructions

  1. Soak bamboo skewers in water for 30 minutes to prevent burning.
  2. Combine all marinade ingredients in a bowl. Add chicken and marinate for at least 3 hours or overnight for best results.
  3. Thread marinated chicken onto skewers.
  4. Heat 1 tbsp oil in a grill pan or BBQ over medium-high heat. Grill skewers for 3–4 minutes on each side or until fully cooked and nicely charred.
  5. While chicken is cooking, prepare the peanut sauce by combining all sauce ingredients in a saucepan over medium heat.
  6. Stir sauce until smooth and heated through. Adjust water for desired consistency.
  7. Serve chicken satay with warm peanut sauce on the side.

Notes

  • For a spicier peanut sauce, add extra red curry paste or chili.
  • Chicken breast can be used, but thighs are juicier and more flavorful.
  • Marinate the chicken overnight for the most flavor.
  • Serve with jasmine rice or cucumber salad for a complete meal.
