Ingredients

1 whole fish (11.5 pounds, such as snapper or tilapia)

4 cloves garlic, minced

2 tablespoons fresh lime juice

2 tablespoons fish sauce

1 tablespoon sugar

12 fresh Thai bird’s eye chilies (optional, for heat)

1 tablespoon fresh cilantro, chopped

1 stalk lemongrass, bruised (optional)

46 kaffir lime leaves (optional)

Salt to taste

Lime slices, for garnish


Instructions

  1. Clean the fish by scaling, gutting, and rinsing it thoroughly under cold water. Pat it dry with paper towels.

  2. Place the fish on a heatproof plate that fits into your steamer.

  3. In a small bowl, combine the minced garlic, lime juice, fish sauce, sugar, and chopped chilies. Stir well until the sugar dissolves.

  4. Pour the sauce over the fish, making sure it’s evenly coated. Optionally, stuff some sauce inside the fish cavity.

  5. If using, add the bruised lemongrass and kaffir lime leaves around the fish.

  6. Fill a pot or wok with water, bringing it to a simmer. Place the steamer with the fish inside the pot and cover.

  7. Steam for about 15-20 minutes, or until the fish flakes easily with a fork.

  8. Carefully remove from the steamer and garnish with fresh cilantro and lime slices before serving.

Notes

  1. You can experiment with fresh herbs like basil or mint for different flavors.
  2. If you prefer a stronger heat level, increase the number of bird’s eye chilies or add chili oil on top before serving.
