Description

Ingredients

  • 1 lb ground sausage
  • 1 tablespoon butter
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh sage, chopped (or 1 tsp dried)
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
  • 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 cups dry stuffing mix (unseasoned)
  • 1 1/2 cups chicken broth
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook the ground sausage until browned and cooked through. Remove and set aside.
  3. In the same skillet, add butter, then sauté onions, celery, and carrots until softened (about 5 minutes).
  4. Add parsley, sage, rosemary, thyme, salt, and pepper. Stir to combine.
  5. In a large bowl, combine cooked sausage, sautéed vegetables, and dry stuffing mix.
  6. In a separate bowl, whisk together chicken broth and eggs. Pour over the stuffing mixture and stir until fully combined and moist.
  7. Using your hands or a scoop, form the mixture into 2-inch balls and place them on the prepared baking sheet.
  8. Bake for 20-25 minutes or until golden brown and heated through.
  9. Serve warm with gravy or cranberry sauce if desired.
