Ingredients
- 1 lb ground sausage
- 1 tablespoon butter
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh sage, chopped (or 1 tsp dried)
- 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
- 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 cups dry stuffing mix (unseasoned)
- 1 1/2 cups chicken broth
- 2 eggs, beaten
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large skillet over medium heat, cook the ground sausage until browned and cooked through. Remove and set aside.
- In the same skillet, add butter, then sauté onions, celery, and carrots until softened (about 5 minutes).
- Add parsley, sage, rosemary, thyme, salt, and pepper. Stir to combine.
- In a large bowl, combine cooked sausage, sautéed vegetables, and dry stuffing mix.
- In a separate bowl, whisk together chicken broth and eggs. Pour over the stuffing mixture and stir until fully combined and moist.
- Using your hands or a scoop, form the mixture into 2-inch balls and place them on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and heated through.
- Serve warm with gravy or cranberry sauce if desired.
