Description

Soft and chewy cookies with the comforting flavor of banana bread and a hint of cinnamon. These banana bread cookies are a delightful twist on a classic quick bread, perfect for snacking or sharing.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe bananas (about 1 large banana)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Add the egg and vanilla extract, then mix in the mashed banana until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the oats, walnuts, and chocolate chips, if using.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra banana flavor, use very ripe bananas with brown spots.
  • Walnuts and chocolate chips are optional and can be omitted or substituted with pecans or raisins.
  • Store cookies in an airtight container at room temperature for up to 4 days.
