Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • For the cream cheese frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

  • In a medium bowl, mix flour, baking powder, baking soda, and salt. Set aside.

  • In a large mixing bowl, cream butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each. Stir in mashed bananas and vanilla.

  • Add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with flour mixture. Mix until just combined.

  • Pour batter into prepared pan and smooth the top.

  • Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.

  • Let cake cool completely before frosting.

  • For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until fluffy.

  • Spread frosting evenly over the cooled cake.

Notes

  • Use overripe bananas for the best flavor.

  • For a layer cake, divide batter between two 9-inch round pans and reduce baking time to 25–30 minutes.
