A vibrant and flavorful Chicken Fajita Casserole packed with seasoned chicken, colorful bell peppers, zesty tomatoes, and melted cheese, all baked to perfection in one easy dish.
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine sliced chicken with olive oil, fajita seasoning, garlic powder, chili powder, cumin, salt, pepper, and lime juice. Toss to coat evenly.
- Add sliced bell peppers and onion to the bowl and mix until vegetables are coated.
- Spread half of the chicken and vegetable mixture evenly into the prepared baking dish.
- Sprinkle half of the drained diced tomatoes over the mixture, then top with half of the shredded cheeses.
- Repeat layers with remaining chicken mixture, tomatoes, and cheeses.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10–15 minutes, until chicken reaches 165°F (74°C) and cheese is melted and bubbly.
- Let rest for 5 minutes before serving. Garnish with chopped cilantro if desired.
Notes
- Drain tomatoes thoroughly to prevent excess liquid.
- For a spicier version, add jalapeños or extra chili powder.
- Can be assembled up to 24 hours ahead and refrigerated before baking.
- Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
- Ensure fajita seasoning is gluten-free if needed.
