Instructions

  1. Place the butter in a small saucepan over medium-low heat. Stir and scrape the butter every 10-15 seconds. The butter will melt, foam, and eventually begin to brown and emit a nutty aroma. Continue cooking until small brown bits form, about 5-7 minutes. Remove from heat and let cool for a few minutes.
  2. In a large bowl, combine the brown butter, brown sugar, and granulated sugar. Mix well with a spatula.
  3. Add the egg, extra egg yolk, and vanilla extract. Mix until smooth.
  4. Add the flour, baking soda, and salt, folding until no flour streaks remain. Be careful not to overmix. The dough should be soft but not sticky.
  5. Fold in the chocolate chips until evenly distributed.
  6. Cover the bowl and refrigerate the dough for at least 1 hour (up to overnight).
  7. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. Remove the dough from the fridge and let it soften at room temperature for about 20 minutes.
  8. Use a 1½-ounce cookie scoop to portion the dough into equal amounts and place on the prepared baking sheets, spacing them about 2 inches apart.
