Ingredients

  • 3/4 cup long grain white rice
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 4 cups whole milk, divided
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • Raisins or dried fruit (optional)

Instructions

  1. In a medium saucepan, combine rice, water, and salt. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
  3. Stir in 3 cups of the milk and the sugar. Increase heat to medium and cook uncovered, stirring frequently, for about 20 minutes or until mixture is thick and creamy.
  4. In a small bowl, whisk the eggs with the remaining 1 cup milk. Slowly stir the egg mixture into the pudding, stirring constantly to prevent curdling.
  5. Cook for 2 more minutes, stirring continuously, until the pudding thickens further.
  6. Remove from heat and stir in butter and vanilla extract. Add cinnamon, nutmeg, or raisins if desired.
  7. Serve warm or transfer to a container, cover, and refrigerate to serve chilled.
