Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 4 ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually stir the dry ingredients into the banana mixture until just combined.
- Fold in chopped walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- You can substitute walnuts with chocolate chips for a sweeter twist.
- This bread freezes well—wrap tightly in plastic wrap and freeze for up to 3 months.
