Description

Soft, espresso-infused cookies topped with a rich mascarpone cream and finished with a dusting of cocoa powder. These tiramisu-inspired treats combine classic Italian flavors in a handheld dessert.


Ingredients

  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix flour, espresso powder, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter until creamy. Add granulated sugar and brown sugar and beat until fluffy. Mix in the egg and vanilla extract until smooth.
  4. Add the dry ingredients to the wet mixture and mix on low speed until just combined.
  5. Scoop 4-tablespoon portions of dough onto the baking sheet, spacing them 2–3 inches apart.
  6. Bake for 11–12 minutes until edges are set. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a bowl, beat mascarpone until smooth. Add whipping cream, powdered sugar, and vanilla extract, and whip until thickened (about 5 minutes).
  8. Spoon or pipe the mascarpone cream onto cooled cookies and spread evenly.
  9. Dust with cocoa powder using a fine sieve before serving.

Notes

  • Ensure cookies are fully cooled before adding cream to prevent melting.
  • Chill the mascarpone cream slightly if it becomes too soft while working.
  • Store cookies in the refrigerator for up to 3 days.
  • For stronger coffee flavor, add an extra teaspoon of espresso powder.
