Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Drain and rinse the chickpeas, then add them to a large mixing bowl.
  2. Add the cherry tomatoes, cucumber, red onion, and parsley to the bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Pour the dressing over the salad and toss until well combined.
  5. Taste and adjust seasoning if needed, then serve immediately or chill before serving.
