Description

A naturally sweet strawberry jam made with real fruit and no added sugar. Thickened with arrowroot and brightened with lemon juice, this simple jam is perfect for spreading or topping desserts.


Ingredients

  • 2½ cups strawberries (frozen and thawed)
  • 1 tablespoon water
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons arrowroot powder

Instructions

  1. Puree the thawed strawberries in a food processor or blender until smooth.
  2. In a medium saucepan, whisk together the water, lemon juice, and arrowroot powder until smooth. Add the strawberry puree and stir to combine.
  3. Bring the mixture to a gentle boil over medium heat, stirring frequently.
  4. Reduce the heat to medium-low and simmer for about 50 minutes until the jam thickens. Stir more frequently as it thickens to prevent burning.
  5. The jam is ready when you drag a rubber spatula through the center and the gap stays open for a few seconds before slowly filling in.
  6. Remove from heat and allow the jam to cool before storing. The jam will continue to thicken as it cools.

Notes

  • If using fresh strawberries, wash, hull, and measure them before pureeing.
  • If the jam becomes too thick after cooling, stir in a small amount of water to loosen it.
  • For a thicker consistency, return the jam to the stove and simmer a little longer.
  • Store the jam in an airtight container in the refrigerator.
