Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 (1-ounce) packet taco seasoning
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 cup chicken broth
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned.
- Add diced onion and bell peppers. Cook for 5-7 minutes until vegetables are tender.
- Stir in taco seasoning, chili powder, and cumin. Cook for 1 minute to toast the spices.
- Add black beans, pinto beans, kidney beans, corn, diced tomatoes, tomato sauce, and chicken broth.
- Stir to combine. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.
- Season with salt and pepper to taste. Serve hot with your favorite toppings.
