Description

This Twice the Onion Green Bean Casserole is a flavorful twist on the classic holiday side dish. It features double the amount of crispy fried onions for extra crunch and flavor, making it a standout at any gathering.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken stock
  • 2 (12-ounce) packages frozen French-style green beans, thawed
  • 2 (6-ounce) cans French fried onions, divided

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt butter. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add garlic, salt, pepper, and nutmeg. Cook for 1 minute.
  4. Sprinkle in flour and stir constantly for 1-2 minutes to form a roux.
  5. Slowly whisk in milk and chicken stock. Continue to whisk until sauce thickens, about 5-7 minutes.
  6. Stir in green beans and 1 can of French fried onions. Mix well to combine.
  7. Transfer mixture to a greased 9×13-inch baking dish.
  8. Bake uncovered for 20 minutes.
  9. Top with remaining can of French fried onions and return to oven for an additional 5 minutes, or until onions are golden and crispy.
  10. Remove from oven and serve hot.

Notes

  • Use fresh green beans if preferred; blanch them before using.
  • Can be made ahead and refrigerated before final baking step.
