Ingredients
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 2 cups all-purpose flour
- ½ tsp vanilla extract
- Pinch of salt
- 1 cup caramel candies (soft caramels)
- 2 tbsp heavy cream
- 1 ½ cups milk chocolate chips
- 1 tbsp vegetable oil
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter and powdered sugar until light and fluffy.
- Add vanilla extract, then gradually mix in flour and salt until dough forms.
- Roll dough on a floured surface and cut into round cookie shapes.
- Place cookies on the baking sheet and bake for 10–12 minutes, until lightly golden. Let cool completely.
- Melt caramel candies with heavy cream in the microwave, stirring every 30 seconds until smooth.
- Spoon caramel over cooled cookies and spread evenly. Let caramel set for 10 minutes.
- Melt chocolate chips with vegetable oil in the microwave in 30-second intervals, stirring until smooth.
- Spread melted chocolate over the caramel layer and let cookies set at room temperature or refrigerate until firm.
- Once chocolate is set, serve and enjoy!
