Description

A refreshing and hearty chickpea salad inspired by the flavors of tzatziki, featuring cucumbers, dill, garlic, and a creamy yogurt dressing. Perfect as a light meal or side dish.


Ingredients

  • 1 can (400g / 14 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1 garlic clove, minced
  • 1 cup Greek yogurt (preferably full fat)
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a mixing bowl, combine the chickpeas, diced cucumber, red onion, and chopped dill.
  2. In a separate small bowl, mix together the Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the chickpea mixture and toss well to combine.
  4. Adjust seasoning with additional salt, pepper, or lemon juice if needed.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

  • For best flavor, let the salad sit in the fridge for a bit before serving.
  • Use fresh dill for optimal flavor – dried dill won’t provide the same freshness.
  • Can be made a few hours ahead. Just give it a stir before serving.
