Description
A vibrant and flavorful pineapple rice made with sweet pineapple chunks, colorful vegetables, and aromatic seasonings. This easy dish is perfect as a side or a light main course.
Ingredients
- 2 cups cooked jasmine rice
- 1 1/2 cups fresh pineapple chunks
- 1 tablespoon vegetable oil
- 1/2 cup diced red bell pepper
- 1/2 cup frozen peas and carrots
- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon ground black pepper
- 1/4 cup roasted cashews (optional)
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in diced bell pepper and peas and carrots. Cook for 3–4 minutes until slightly tender.
- Add pineapple chunks and cook for another 2 minutes.
- Stir in the cooked rice, breaking up any clumps.
- Add soy sauce, sesame oil, and black pepper. Mix well and cook for 3–5 minutes until heated through.
- Remove from heat and stir in green onions.
- Garnish with roasted cashews and chopped cilantro if desired. Serve warm.
Notes
- Use day-old rice for the best texture and to prevent mushiness.
- Add tofu for extra protein and a heartier meal.
- Adjust soy sauce according to taste.
- Fresh pineapple provides the best flavor, but canned (drained) can be used.
