Description

A vibrant and flavorful pineapple rice made with sweet pineapple chunks, colorful vegetables, and aromatic seasonings. This easy dish is perfect as a side or a light main course.


Ingredients

  • 2 cups cooked jasmine rice
  • 1 1/2 cups fresh pineapple chunks
  • 1 tablespoon vegetable oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup frozen peas and carrots
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/4 cup roasted cashews (optional)
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in diced bell pepper and peas and carrots. Cook for 3–4 minutes until slightly tender.
  4. Add pineapple chunks and cook for another 2 minutes.
  5. Stir in the cooked rice, breaking up any clumps.
  6. Add soy sauce, sesame oil, and black pepper. Mix well and cook for 3–5 minutes until heated through.
  7. Remove from heat and stir in green onions.
  8. Garnish with roasted cashews and chopped cilantro if desired. Serve warm.

Notes

  • Use day-old rice for the best texture and to prevent mushiness.
  • Add tofu for extra protein and a heartier meal.
  • Adjust soy sauce according to taste.
  • Fresh pineapple provides the best flavor, but canned (drained) can be used.
