Description

A creamy, cheesy baked spaghetti casserole loaded with tender shredded chicken, savory sauce, and melted cheeses. This comforting dish is perfect for family dinners and easy weeknight meals.


Ingredients

  • 12 oz spaghetti
  • 2 cups cooked, shredded chicken
  • 2 tablespoons butter
  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) Rotel tomatoes, drained
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add diced onion, bell pepper, and garlic and sauté for 3–4 minutes until softened.
  4. Stir in the cream of chicken soup, cream of mushroom soup, Rotel tomatoes, and chicken broth. Mix until well combined.
  5. Add Italian seasoning, paprika, salt, and black pepper. Stir thoroughly.
  6. Reduce heat to low and add the shredded chicken, stirring until coated with the sauce.
  7. Add the cooked spaghetti and mix until evenly combined with the sauce.
  8. Transfer the mixture into the prepared baking dish and spread evenly.
  9. Top with shredded cheddar, mozzarella, and grated Parmesan cheese.
  10. Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly.
  11. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • Rotisserie chicken works well for a quick shortcut.
  • Add red pepper flakes for a little heat if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or microwave until warmed through.
  • You can substitute Monterey Jack or Colby cheese for a different flavor.
