Description

This Vanilla Almond Milk Latte is a naturally sweetened, creamy alternative to store-bought coffee drinks, made with homemade almond milk, dates, and vanilla. It’s perfect served hot or iced and is suitable for vegan and paleo diets.


Ingredients

  • 1 cup raw almonds (soaked overnight)
  • 1½ cups water + ½ cup more water
  • 1 to 3 Medjool dates (depending on sweetness preference)
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • Cold-brew coffee or espresso (or strong brewed coffee)

Instructions

  1. Soak almonds overnight in water.
  2. Drain the almonds and blend with 1½ cups water, pitted dates, and vanilla bean or extract for 2–3 minutes until smooth and creamy.
  3. Add the remaining ½ cup of water and pulse briefly to combine.
  4. Strain the mixture using a nut-milk bag or cheesecloth into a jar, squeezing out as much liquid as possible.
  5. For Iced Latte: Fill a glass with ice, add cold brew or espresso to halfway, then top with the vanilla almond milk creamer. Stir gently.
  6. For Hot Latte: Gently warm both the creamer and coffee, froth the almond milk if desired, then pour into a mug and serve.

Notes

  • Store leftover almond milk creamer in the refrigerator for up to 3–4 days.
  • Gently reheat without boiling to preserve texture and flavor.
  • Shake or stir before each use as natural separation may occur.
  • Use leftover almond pulp in smoothies, oatmeal, or baking.
  • Adjust date quantity or use maple syrup/coconut sugar for different levels of sweetness.
