Ingredients

  • 1 package vegan chicken pieces
  • 1 tablespoon olive oil
  • 1 cup cooked rice
  • 1 cup shredded cabbage
  • 1 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1/4 cup crushed peanuts
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 24 tablespoons warm water

Instructions

  1. Heat olive oil in a skillet over medium heat and cook the vegan chicken pieces until browned and heated through.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, garlic, ginger, and warm water until smooth and creamy.
  3. Prepare bowls by adding a base of cooked rice.
