Ingredients
- 1 package vegan chicken pieces
- 1 tablespoon olive oil
- 1 cup cooked rice
- 1 cup shredded cabbage
- 1 cup sliced cucumbers
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1/4 cup crushed peanuts
- 1/3 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon maple syrup
- 1 teaspoon garlic, minced
- 1/2 teaspoon ginger, grated
- 2–4 tablespoons warm water
Instructions
- Heat olive oil in a skillet over medium heat and cook the vegan chicken pieces until browned and heated through.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, garlic, ginger, and warm water until smooth and creamy.
- Prepare bowls by adding a base of cooked rice.
- Top with cooked vegan chicken, cabbage, cucumbers, carrots, and cilantro.
- Drizzle peanut sauce over the bowls and sprinkle with crushed peanuts.
- Serve immediately and enjoy.

- Add sriracha or chili flakes for extra heat.
