This creamy vegan coconut pie is a dairy-free dessert made with wholesome ingredients and rich coconut flavor, perfect for any occasion.
Ingredients
- 1 1/2 cups full-fat coconut milk
- 1/2 cup milk of choice
- 1/4 cup cornstarch or arrowroot
- 1/4 tsp salt
- 1/4 cup sugar or sweetener of choice
- 1/4 cup shredded coconut (unsweetened or sweetened)
- 1 tsp pure vanilla extract
- Optional: 1 tbsp coconut butter or oil for richer flavor
- Optional pie crust of choice
- Optional whipped coconut cream for topping
Instructions
- Whisk the coconut milk, milk of choice, cornstarch, salt, and sweetener in a saucepan until smooth.
- Turn on the heat to medium and stir constantly until the mixture thickens.
- Once thick, remove from heat and stir in shredded coconut, vanilla extract, and optional coconut butter/oil.
- Pour the filling into a prepared pie crust or serving dish.
- Let it cool, then refrigerate for a few hours or overnight until set.
- Top with whipped coconut cream and more shredded coconut before serving, if desired.
Notes
- You can use store-bought or homemade pie crust.
- Adjust sweetness to taste by choosing your preferred sweetener.
- Arrowroot works well as a cornstarch alternative for thickening.
- The pie sets best after chilling for at least 4–6 hours.
