Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder

- 1/4 cup fresh lemon juice

- 1/4 cup powdered sugar (for dusting)
- 1 cup heavy cream
- 1/2 cup mascarpone cheese
- 1/4 cup powdered sugar

Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 10×15 inch jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs and granulated sugar together for about 5 minutes until light and fluffy.
- Gently fold in the flour, baking powder, and salt until just combined.
- Stir in the lemon juice and lemon zest, mixing gently. Pour the batter evenly into the prepared pan.
- Bake for 12–15 minutes, or until the cake is lightly golden and springs back when touched.
- While the cake bakes, dust a clean kitchen towel with powdered sugar.
- Invert the warm cake onto the prepared towel, remove the parchment paper, and carefully roll the cake up from the short end with the towel inside. Let cool completely.
- In a mixing bowl, beat the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until stiff peaks form.
- Gently unroll the cooled cake, spread the filling evenly over the surface, and roll the cake back up without the towel.
- Dust with additional powdered sugar before slicing and serving.
