Ingredients
- 1.5 lb chicken thighs or drumsticks, cut into serving pieces
- 2 tablespoons vegetable oil
- 2 tablespoons sugar
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup water or chicken stock
- 1/4 cup fresh ginger, julienned
- 4 cloves garlic, minced
- 1 small shallot, sliced
- 1/2 teaspoon ground black pepper
- 2 green onions, chopped (for garnish)
Instructions
- In a bowl, marinate the chicken with fish sauce, soy sauce, oyster sauce, cornstarch, and black pepper for at least 20 minutes.
- Heat vegetable oil in a saucepan over medium heat and add sugar. Cook until the sugar melts and turns a light amber color.
- Add garlic and shallots to the caramelized sugar and sauté briefly until fragrant.
- Add the marinated chicken and stir to coat evenly with the caramel sauce.
- Add ginger and water or stock, then bring to a gentle simmer.
- Cover and cook on low heat for 25–30 minutes, stirring occasionally, until chicken is tender and sauce thickens.
- Taste and adjust seasoning if needed.
- Garnish with green onions and serve hot with steamed rice.
