Description

Vietnamese Ginger Chicken (Gà Kho Gừng) is a comforting braised chicken dish simmered with fresh ginger, garlic, fish sauce, and caramelized sugar for a savory-sweet and aromatic flavor.


Ingredients

  • 1.5 lb chicken thighs or drumsticks, cut into serving pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons sugar
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water or chicken stock
  • 1/4 cup fresh ginger, julienned
  • 4 cloves garlic, minced
  • 1 small shallot, sliced
  • 1/2 teaspoon ground black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a bowl, marinate the chicken with fish sauce, soy sauce, oyster sauce, cornstarch, and black pepper for at least 20 minutes.
  2. Heat vegetable oil in a saucepan over medium heat and add sugar. Cook until the sugar melts and turns a light amber color.
  3. Add garlic and shallots to the caramelized sugar and sauté briefly until fragrant.
  4. Add the marinated chicken and stir to coat evenly with the caramel sauce.
  5. Add ginger and water or stock, then bring to a gentle simmer.
  6. Cover and cook on low heat for 25–30 minutes, stirring occasionally, until chicken is tender and sauce thickens.
  7. Taste and adjust seasoning if needed.
  8. Garnish with green onions and serve hot with steamed rice.
