Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup natural peanut butter
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Add chickpeas, peanut butter, maple syrup, egg, vanilla extract, baking powder, and salt to a food processor.
  3. Blend until completely smooth, scraping down the sides as needed.
  4. Fold in the chocolate chips by hand or pulse briefly to combine.
  5. Spread the batter evenly into the prepared baking pan.
  6. Bake for 18–22 minutes or until the top is set and a toothpick inserted comes out mostly clean.
  7. Allow to cool completely before slicing into squares and serving.
