Ingredients

  • 1 bag frozen gyoza or dumplings (about 1 lb)
  • 1 can coconut milk (about 14 oz)
  • 2 tbsp Thai red curry paste
  • 3 cloves garlic, minced
  • 2 tsp ginger, grated
  • 3 cups spinach or leafy greens of choice
  • Green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. In a baking dish, combine the coconut milk, Thai red curry paste, minced garlic, and grated ginger. Whisk until smooth and well combined.
  3. Add the spinach or greens and toss to coat in the sauce.
  4. Nestle the frozen dumplings into the dish without defrosting, spooning some sauce over the top.
  5. Cover with an oven-safe lid or foil and bake for 20–25 minutes, until the dumplings are fully cooked through.
  6. Check doneness by cutting one dumpling open. Garnish with sliced green onions (and chili crisp if desired) before serving.
