Ingredients
- 1 bag frozen gyoza or dumplings (about 1 lb)
- 1 can coconut milk (about 14 oz)
- 2 tbsp Thai red curry paste
- 3 cloves garlic, minced
- 2 tsp ginger, grated
- 3 cups spinach or leafy greens of choice
- Green onions, sliced (for garnish)
Instructions
- Preheat the oven to 375°F.
- In a baking dish, combine the coconut milk, Thai red curry paste, minced garlic, and grated ginger. Whisk until smooth and well combined.
- Add the spinach or greens and toss to coat in the sauce.
- Nestle the frozen dumplings into the dish without defrosting, spooning some sauce over the top.
- Cover with an oven-safe lid or foil and bake for 20–25 minutes, until the dumplings are fully cooked through.
- Check doneness by cutting one dumpling open. Garnish with sliced green onions (and chili crisp if desired) before serving.

- Use any type of frozen dumplings such as chicken, pork, or vegetable.
- Swap spinach with bok choy, kale, or napa cabbage.
- Add chili crisp or chili oil for extra heat and flavor.
