Ingredients
- 1/2 cup white sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
- 6 ounces bittersweet chocolate, chopped
- 1/2 cup unsalted butter
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 3 large eggs
- 1/2 cup unsweetened cocoa powder
Instructions
- Preheat the oven to 375°F (190°C). Grease six 6-ounce ramekins and set them aside.
- To make the caramel sauce, combine 1/2 cup sugar and 1/4 cup water in a small saucepan over medium heat. Stir until sugar dissolves. Increase heat and boil without stirring until the syrup turns deep amber. Remove from heat and carefully add heavy cream and 1 tablespoon butter. Stir until smooth and set aside.
- In a heatproof bowl, melt chocolate and 1/2 cup butter over a double boiler or in the microwave in short bursts, stirring until smooth. Let it cool slightly.
- Whisk in 1/2 cup sugar, salt, and vanilla extract into the chocolate mixture.
- Add eggs one at a time, whisking well after each addition.
- Sift in cocoa powder and stir until just combined.
- Divide batter evenly among prepared ramekins.
- Bake for 15–20 minutes until the cakes have puffed and the edges are set but the centers are still slightly soft.
- Let the cakes cool for a few minutes, then invert onto serving plates.
- Drizzle with caramel sauce and serve warm.
