These Western breakfast sliders are savory, cheesy mini sandwiches packed with eggs, ham, and peppers, perfect for a hearty breakfast or brunch.
Ingredients
- 12 slider buns
- 6 large eggs
- 1/4 cup milk
- 1/2 cup diced ham
- 1/4 cup diced green bell pepper
- 1/4 cup diced onion
- 6 slices cheddar cheese
- 2 tablespoons butter, melted
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in diced ham, bell pepper, and onion.
- Pour mixture into a skillet over medium heat and cook, stirring, until eggs are set.
- Slice slider buns in half and place the bottom halves in the baking dish.
- Evenly spread the egg mixture over the buns and top with cheese slices.
- Place the top halves of the buns over the cheese.
- Brush melted butter over the tops.
- Bake for 10–15 minutes until cheese is melted and tops are golden.
- Remove, slice, and serve warm.
Notes
- You can substitute ham with cooked bacon or sausage.
- Add hot sauce or mustard for extra flavor.
