Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup white chocolate chips or melting wafers
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the molasses and egg until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
- Bake for 8-10 minutes, or until the edges are set but the centers remain soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Melt the white chocolate in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth.
- Dip half of each cooled cookie into the melted white chocolate, allowing the excess to drip off. Place on parchment paper and let the chocolate set completely.
