Description
A flavorful and tangy grilled chicken recipe infused with fresh cilantro and zesty lime, perfect for summer cookouts or a quick and healthy weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon honey (optional for sweetness)
Instructions
- In a small bowl, whisk together the chopped cilantro, olive oil, lime juice, lime zest, minced garlic, ground cumin, chili powder, salt, black pepper, and honey (if using).
- Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the cilantro-lime marinade over the chicken, ensuring it is fully coated. Seal or cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade. Grill for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C) and grill marks form.
- Remove from the grill and let the chicken rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken closer to 4 hours.
- You can substitute chicken thighs for a juicier result; adjust cooking time as needed.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Serve with grilled vegetables, rice, or a fresh salad.
