Ingredients
- 2 medium zucchini, cut into fries
- 1 large egg
- 1 cup grated Parmesan cheese
- 1/2 cup blanched almond flour
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400 degrees F (204 degrees C). Line a baking sheet with parchment paper and set aside.
- Cut the zucchini into fry-sized pieces.
- In a small bowl, beat the egg.
- In another bowl, mix together Parmesan cheese, almond flour, garlic powder, paprika, salt, and pepper.
- Dip each zucchini piece into the egg, then roll in the Parmesan mixture to coat.
- Place coated zucchini fries onto the prepared baking sheet in a single layer.
- Bake for 20-25 minutes, until golden and crispy. Flip halfway through baking for even crispness.
- Serve immediately with your favorite dipping sauce.
