Description

Crispy Parmesan Zucchini Fries are a healthy, low-carb alternative to traditional fries. Baked to perfection, these zucchini fries are coated with Parmesan cheese and almond flour for a crunchy, flavorful side or snack.


Ingredients

  • 2 medium zucchini, cut into fries
  • 1 large egg
  • 1 cup grated Parmesan cheese
  • 1/2 cup blanched almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400 degrees F (204 degrees C). Line a baking sheet with parchment paper and set aside.
  2. Cut the zucchini into fry-sized pieces.
  3. In a small bowl, beat the egg.
  4. In another bowl, mix together Parmesan cheese, almond flour, garlic powder, paprika, salt, and pepper.
  5. Dip each zucchini piece into the egg, then roll in the Parmesan mixture to coat.
  6. Place coated zucchini fries onto the prepared baking sheet in a single layer.
  7. Bake for 20-25 minutes, until golden and crispy. Flip halfway through baking for even crispness.
  8. Serve immediately with your favorite dipping sauce.
