Ingredients

2 medium zucchinis, spiralized into noodles

2 boneless, skinless chicken breasts, cooked and sliced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 tablespoons unsalted butter

2 garlic cloves, minced

1/4 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)


Instructions

  1. Spiralize the zucchinis into noodles using a spiralizer or vegetable peeler. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, until golden brown and fully cooked. Remove the chicken and slice into thin strips.
  3. In the same skillet, melt the butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir to combine with the garlic and butter. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Stir in the Parmesan and mozzarella cheeses, allowing them to melt into the sauce. Season with salt and pepper to taste.
  6. Add the zucchini noodles to the skillet and toss gently in the sauce. Cook for 2-3 minutes until heated through and slightly softened.
  7. Add the sliced chicken to the skillet and toss to combine. Heat for another minute until everything is evenly mixed.
  8. Garnish with fresh parsley, if desired, and serve immediately.
