Description
These homemade Almond Joy Bars feature a rich coconut cream filling topped with almonds and coated in smooth chocolate. They are a decadent no-bake treat perfect for sharing.
Ingredients
- 8 ounces cream cheese, softened to room temperature
- 2 tablespoons salted butter, softened to room temperature
- 1 teaspoon coconut extract
- 4 cups powdered sugar, sifted (plus more for dusting/shaping candies)
- 1 cup sweetened shredded coconut
- 60 whole almonds
- 3 cups semi-sweet chocolate chips, divided
- 4.5 tablespoons vegetable oil, divided
Instructions
- In a medium mixing bowl, use a handheld or stand mixer to cream together the softened cream cheese, butter, and coconut extract until smooth.
- Beat in 2 cups of powdered sugar until incorporated, then add the remaining 2 cups and mix until smooth and thick.
- Stir in the shredded coconut until evenly combined.
- Cover and refrigerate for 30 minutes to 1 hour.
- Line two 9×13-inch baking sheets with parchment paper. Scoop portions using a 1½-inch scoop and shape into oval bars, using powdered sugar to prevent sticking.
- Place shaped bars on baking sheets and top each with two whole almonds.
- Freeze for 1–2 hours until firm.
- Melt half of the chocolate chips with half of the vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each frozen bar into melted chocolate, coating completely.
- Lift with a fork, tap off excess chocolate, and return to parchment paper.
- Repeat with remaining chocolate and oil as needed.
- Refrigerate for 15–30 minutes until chocolate is set.
- Serve or store in an airtight container.
