Description

These homemade Almond Joy Bars feature a rich coconut cream filling topped with almonds and coated in smooth chocolate. They are a decadent no-bake treat perfect for sharing.


Ingredients

  • 8 ounces cream cheese, softened to room temperature
  • 2 tablespoons salted butter, softened to room temperature
  • 1 teaspoon coconut extract
  • 4 cups powdered sugar, sifted (plus more for dusting/shaping candies)
  • 1 cup sweetened shredded coconut
  • 60 whole almonds
  • 3 cups semi-sweet chocolate chips, divided
  • 4.5 tablespoons vegetable oil, divided

Instructions

  1. In a medium mixing bowl, use a handheld or stand mixer to cream together the softened cream cheese, butter, and coconut extract until smooth.
  2. Beat in 2 cups of powdered sugar until incorporated, then add the remaining 2 cups and mix until smooth and thick.
  3. Stir in the shredded coconut until evenly combined.
  4. Cover and refrigerate for 30 minutes to 1 hour.
  5. Line two 9×13-inch baking sheets with parchment paper. Scoop portions using a 1½-inch scoop and shape into oval bars, using powdered sugar to prevent sticking.
  6. Place shaped bars on baking sheets and top each with two whole almonds.
  7. Freeze for 1–2 hours until firm.
  8. Melt half of the chocolate chips with half of the vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  9. Dip each frozen bar into melted chocolate, coating completely.
  10. Lift with a fork, tap off excess chocolate, and return to parchment paper.
  11. Repeat with remaining chocolate and oil as needed.
  12. Refrigerate for 15–30 minutes until chocolate is set.
  13. Serve or store in an airtight container.
