Description

These sweet and salty fruit oat and pretzel bars feature a buttery crumble layered with jam and fresh berries. Perfect for snacking or dessert, they offer a satisfying mix of textures and flavors.


Ingredients

  • 4 cups salted mini pretzels
  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1/41/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks salted butter, at room temperature
  • 2 teaspoons vanilla extract
  • 1012 ounces jam (strawberry, blackberry, or blueberry)
  • 1/2 cup fresh berries, chopped (strawberries, raspberries, etc.)

Instructions

  1. Preheat the oven to 350°F and line a 9×13 inch baking dish with parchment paper.
  2. Using a food processor or blender, grind the pretzels into a fine flour. Measure 1 cup of pretzel flour and add it to a large bowl.
  3. Add oats, flour, brown sugar, baking powder, and salt. Mix to combine.
  4. Add butter and vanilla extract, then mix until a crumbly dough forms.
  5. Press one-third of the dough evenly into the bottom of the prepared baking dish.
  6. Spread the jam evenly over the base layer and top with fresh berries.
  7. Sprinkle the remaining dough evenly over the jam layer.
  8. Bake for 30–40 minutes or until the top is golden brown.
  9. Allow to cool completely before slicing into bars.

Notes

  • Store bars in an airtight container at room temperature for up to 1 week.
  • You can use any flavor of jam depending on preference.
  • Whole wheat flour adds a nuttier flavor, while all-purpose keeps it lighter.
  • For extra crunch, reserve some crushed pretzels to sprinkle on top before baking.
