Description
These sweet and salty fruit oat and pretzel bars feature a buttery crumble layered with jam and fresh berries. Perfect for snacking or dessert, they offer a satisfying mix of textures and flavors.
Ingredients
- 4 cups salted mini pretzels
- 1 1/2 cups old fashioned oats
- 1/2 cup all-purpose or whole wheat flour
- 1/4 – 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 sticks salted butter, at room temperature
- 2 teaspoons vanilla extract
- 10–12 ounces jam (strawberry, blackberry, or blueberry)
- 1/2 cup fresh berries, chopped (strawberries, raspberries, etc.)
Instructions
- Preheat the oven to 350°F and line a 9×13 inch baking dish with parchment paper.
- Using a food processor or blender, grind the pretzels into a fine flour. Measure 1 cup of pretzel flour and add it to a large bowl.
- Add oats, flour, brown sugar, baking powder, and salt. Mix to combine.
- Add butter and vanilla extract, then mix until a crumbly dough forms.
- Press one-third of the dough evenly into the bottom of the prepared baking dish.
- Spread the jam evenly over the base layer and top with fresh berries.
- Sprinkle the remaining dough evenly over the jam layer.
- Bake for 30–40 minutes or until the top is golden brown.
- Allow to cool completely before slicing into bars.
Notes
- Store bars in an airtight container at room temperature for up to 1 week.
- You can use any flavor of jam depending on preference.
- Whole wheat flour adds a nuttier flavor, while all-purpose keeps it lighter.
- For extra crunch, reserve some crushed pretzels to sprinkle on top before baking.
