Description
A quick and flavorful omelet wrapped in soft Arabic pita, perfect for a satisfying breakfast or light meal.
Ingredients
- 4 eggs
- 2 Arabic pita breads
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 tomato, diced
- 1/2 green bell pepper, chopped
- 50 g feta cheese, crumbled
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the onion and bell pepper until softened.
- Add the diced tomato and cook for another 2–3 minutes until slightly reduced.
- In a bowl, whisk the eggs with salt and pepper.
- Pour the egg mixture into the pan and cook gently, stirring slightly until the eggs begin to set.
- Add the crumbled feta cheese and continue cooking until the omelet is fully set but still soft.
- Warm the pita breads in a separate pan or oven.
- Fill each pita with the omelet mixture, sprinkle with fresh parsley, and fold to serve.
Notes
- You can add cooked ham or chicken for extra protein.
- Swap feta with another cheese if preferred.
- Serve with yogurt or a fresh salad on the side.
- Best enjoyed warm right after preparation.
