Ingredients

  • 4 eggs
  • 2 Arabic pita breads
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 tomato, diced
  • 1/2 green bell pepper, chopped
  • 50 g feta cheese, crumbled

  • Fresh parsley, chopped

Instructions

  1. Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the onion and bell pepper until softened.
  2. Add the diced tomato and cook for another 2–3 minutes until slightly reduced.
  3. In a bowl, whisk the eggs with salt and pepper.
  4. Pour the egg mixture into the pan and cook gently, stirring slightly until the eggs begin to set.
  5. Add the crumbled feta cheese and continue cooking until the omelet is fully set but still soft.
