Description

These baked chicken tacos are crispy, cheesy, and packed with seasoned chicken for an easy weeknight meal. Served with a creamy avocado lime ranch sauce, they are flavorful, customizable, and family friendly.


Ingredients

  • 2 cups shredded chicken
  • 2 tablespoons taco seasoning
  • 2 tablespoons water
  • 2 teaspoons lime juice
  • 8 corn tortillas
  • 1 1/2 cups shredded cheese
  • Cooking spray
  • 1 avocado
  • Juice of one lime
  • 1/2 cup ranch dressing
  • 12 tablespoons milk
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F and generously spray a large baking sheet with nonstick cooking spray.
  2. In a medium skillet, combine the shredded chicken, taco seasoning, water, and lime juice. Cook over medium heat for 3 to 5 minutes, or until heated through.
  3. Warm the tortillas in a dry skillet for 20 to 30 seconds per side until soft and pliable.
  4. Place 1 tablespoon of shredded cheese on half of each tortilla. Add about 1/4 cup of the chicken mixture, then top with another tablespoon of cheese.
  5. Fold the tortillas in half and place them on the prepared baking sheet.
  6. Lightly spray the tops with cooking spray and bake for 12 to 15 minutes, or until crispy and the cheese is melted.
  7. While the tacos bake, make the avocado lime ranch sauce by mashing the avocado with lime juice in a bowl. Stir in the ranch dressing, milk, and garlic powder until smooth and creamy.
  8. Serve the warm tacos with the avocado lime ranch dipping sauce.

  • Rotisserie chicken works great for a quick shortcut.
  • Warm tortillas before folding to prevent cracking.
