Description
This baked honey mustard chicken breast is tender, juicy, and coated in a sweet and tangy mustard glaze. It’s an easy weeknight dinner packed with flavor and ready in just 35 minutes.
Ingredients
- 1 tablespoon olive oil
- 1/4 cup honey
- 2 tablespoons whole grain mustard
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 4 cloves garlic, minced
- 2 pounds boneless skinless chicken breasts (4 trimmed chicken breasts)
- 4 sprigs fresh thyme (optional)
Instructions
- Preheat the oven to 400º F.
- In a bowl, whisk together the olive oil, honey, whole grain mustard, Dijon mustard, salt, and minced garlic.
- Place the chicken breasts between two sheets of plastic wrap on a cutting board. Gently pound the chicken with a meat tenderizer, rolling pin, or heavy pan until about 1 inch thick.
- Transfer the chicken breasts to a 9×13-inch baking dish. Pour the honey mustard sauce evenly over the chicken. Arrange the thyme sprigs around the chicken if using.
- Cover the dish with aluminum foil and bake for 15 minutes.
- Remove the foil and continue baking for another 10 minutes, or until the chicken reaches an internal temperature of 165º F.
- Cover loosely and let the chicken rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken in the sauce for up to 2 hours before baking.
- Serve with roasted vegetables, rice, or mashed potatoes.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Fresh rosemary can be used instead of thyme.
