Description

This baked honey mustard chicken breast is tender, juicy, and coated in a sweet and tangy mustard glaze. It’s an easy weeknight dinner packed with flavor and ready in just 35 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 2 tablespoons whole grain mustard
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 4 cloves garlic, minced
  • 2 pounds boneless skinless chicken breasts (4 trimmed chicken breasts)
  • 4 sprigs fresh thyme (optional)

Instructions

  1. Preheat the oven to 400º F.
  2. In a bowl, whisk together the olive oil, honey, whole grain mustard, Dijon mustard, salt, and minced garlic.
  3. Place the chicken breasts between two sheets of plastic wrap on a cutting board. Gently pound the chicken with a meat tenderizer, rolling pin, or heavy pan until about 1 inch thick.
  4. Transfer the chicken breasts to a 9×13-inch baking dish. Pour the honey mustard sauce evenly over the chicken. Arrange the thyme sprigs around the chicken if using.
  5. Cover the dish with aluminum foil and bake for 15 minutes.
  6. Remove the foil and continue baking for another 10 minutes, or until the chicken reaches an internal temperature of 165º F.
  7. Cover loosely and let the chicken rest for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in the sauce for up to 2 hours before baking.
  • Serve with roasted vegetables, rice, or mashed potatoes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Fresh rosemary can be used instead of thyme.
