Description

These soft and wholesome baked oatmeal bars are naturally sweetened and easy to customize with chocolate chips, nuts, or other mix-ins. They make a great breakfast, snack, or meal prep option.

Ingredients

  • 2 cups rolled oats
  • 1 1/3 cup mashed banana
  • 6 tbsp water
  • 1/2 tsp salt
  • 3 tbsp pure maple syrup, agave, honey, or stevia equivalent
  • 3 tbsp oil, nut butter, or additional water
  • 1 tsp pure vanilla extract
  • Optional handful chocolate chips, chopped nuts, or other mix-ins

Instructions

  1. Preheat the oven to 350°F. Line an 8-inch baking pan with parchment paper or grease well.
  2. Combine the rolled oats, mashed banana, water, salt, sweetener, oil or nut butter, and vanilla extract in a mixing bowl. Stir until evenly combined.
  3. Fold in any optional mix-ins if using.
  4. Spread the mixture evenly into the prepared pan and smooth the top.
  5. Sprinkle chocolate chips over the surface if desired.
  6. Bake for 20 minutes.
  7. Turn off the oven and leave the bars inside with the door closed for an additional 5 minutes.
  8. Remove from the oven, cool slightly, and slice into 6 bars.
  9. Store leftovers in the refrigerator for 3 to 4 days or freeze for longer storage.

Notes

  • Use very ripe bananas for the best sweetness and texture.
  • Chocolate chips, chopped nuts, dried fruit, or seeds make excellent additions.
  • For an oil-free version, use additional water or nut butter.
  • These bars can be frozen for up to 3 months.
  • Enjoy warm or chilled as a quick breakfast or snack.
