Description
These soft and wholesome baked oatmeal bars are naturally sweetened and easy to customize with chocolate chips, nuts, or other mix-ins. They make a great breakfast, snack, or meal prep option.
Ingredients
- 2 cups rolled oats
- 1 1/3 cup mashed banana
- 6 tbsp water
- 1/2 tsp salt
- 3 tbsp pure maple syrup, agave, honey, or stevia equivalent
- 3 tbsp oil, nut butter, or additional water
- 1 tsp pure vanilla extract
- Optional handful chocolate chips, chopped nuts, or other mix-ins
Instructions
- Preheat the oven to 350°F. Line an 8-inch baking pan with parchment paper or grease well.
- Combine the rolled oats, mashed banana, water, salt, sweetener, oil or nut butter, and vanilla extract in a mixing bowl. Stir until evenly combined.
- Fold in any optional mix-ins if using.
- Spread the mixture evenly into the prepared pan and smooth the top.
- Sprinkle chocolate chips over the surface if desired.
- Bake for 20 minutes.
- Turn off the oven and leave the bars inside with the door closed for an additional 5 minutes.
- Remove from the oven, cool slightly, and slice into 6 bars.
- Store leftovers in the refrigerator for 3 to 4 days or freeze for longer storage.
Notes
- Use very ripe bananas for the best sweetness and texture.
- Chocolate chips, chopped nuts, dried fruit, or seeds make excellent additions.
- For an oil-free version, use additional water or nut butter.
- These bars can be frozen for up to 3 months.
- Enjoy warm or chilled as a quick breakfast or snack.
