Ingredients
- 2 cups rolled oats
- 1 cup mashed bananas
- 1/2 cup peanut butter
- 1/3 cup honey or maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped nuts
- 1/2 cup dried cranberries or raisins
- 1/3 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine mashed bananas, peanut butter, honey, eggs, and vanilla extract until smooth.
- Stir in the oats, cinnamon, baking powder, and salt.
- Fold in the chopped nuts, dried fruit, and chocolate chips.
- Spread the mixture evenly into the prepared pan.
- Bake for 25 to 30 minutes, or until the bars are set and lightly golden on top.
- Allow the bars to cool completely before slicing into squares.
