Description

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed bananas
  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped nuts
  • 1/2 cup dried cranberries or raisins
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine mashed bananas, peanut butter, honey, eggs, and vanilla extract until smooth.
  3. Stir in the oats, cinnamon, baking powder, and salt.
  4. Fold in the chopped nuts, dried fruit, and chocolate chips.
  5. Spread the mixture evenly into the prepared pan.
  6. Bake for 25 to 30 minutes, or until the bars are set and lightly golden on top.
  7. Allow the bars to cool completely before slicing into squares.
