Description
A hearty and flavorful beef enchilada casserole layered with tortillas, beans, and melty cheese, perfect for a quick family dinner.
Ingredients
- 1 tablespoon olive oil
- 1 small diced yellow onion (divided)
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 tablespoon all-purpose flour
- 15 ounces tomato sauce
- 1 cup chicken broth
- 2 minced garlic cloves
- 1 pound ground beef (or ground chicken)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4.5 ounces diced green chiles
- 15 ounces black beans, drained and rinsed
- 12 corn tortillas (6-inch size)
- 3 cups shredded colby jack cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add half of the diced onion and sauté until softened, about 3–4 minutes.
- Add garlic, cumin, chili powder, and kosher salt. Stir and cook for 1 minute until fragrant.
- Sprinkle in flour and stir to combine. Gradually add tomato sauce and chicken broth, stirring until smooth. Simmer for 5 minutes until slightly thickened, then set aside.
- In another skillet, cook ground beef over medium heat. Add remaining onion, salt, and black pepper. Cook until beef is browned and fully cooked. Drain excess fat if needed.
- Stir in black beans and diced green chiles into the beef mixture. Cook for 2–3 minutes until heated through.
- Lightly grease a casserole dish. Spread a thin layer of sauce on the bottom, then layer tortillas, beef mixture, sauce, and cheese. Repeat layers, finishing with cheese on top.
- Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- Ground chicken can be used instead of beef for a lighter version.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or microwave until warmed through.
- Add jalapeños or hot sauce for extra spice.
- Serve with sour cream, cilantro, or avocado if desired.
