Description
This healthy banana bread is moist, naturally sweetened, and made with wholesome ingredients like whole wheat flour and ripe bananas. It’s a nutritious twist on a classic treat, perfect for breakfast or a snack.
Ingredients
- 3–4 very ripe bananas (1 ½ – 1 ¾ cups smashed banana)
- 2 large eggs
- ½ cup cottage cheese (or plain Greek yogurt)
- 1/3 cup honey (or maple syrup)
- 1 teaspoon vanilla extract
- 1 ½ cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F. Grease a 9×5 inch bread pan and set aside.
- Place the bananas in a blender and purée until smooth. Measure to ensure you have 1½ to 1¾ cups.
- Add the eggs, cottage cheese, honey, and vanilla extract to the blender. Pulse 4-5 times until smooth and fully combined, without overmixing.
- In a mixing bowl, combine the whole wheat flour, salt, baking soda, and cinnamon. Mix well.
- Pour the banana mixture into the dry ingredients and gently fold until just combined. Do not overmix.
- Transfer the batter into the prepared bread pan. Optionally, top with sliced banana and a sprinkle of cinnamon.
- Bake for 45 minutes. Check with a toothpick; if it comes out mostly clean, it is done. If not, bake an additional 5-10 minutes.
- Cool in the pan for 15 minutes, then remove and let cool completely before slicing.
Notes
- Greek yogurt can be used instead of cottage cheese for a smoother texture.
- Do not overmix the batter to keep the bread tender.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- This bread freezes well; wrap slices individually for convenience.
