Ingredients

  • 8 ounces soba noodles
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water to stop cooking and prevent sticking.
  2. In a small bowl, whisk together soy sauce, rice vinegar, maple syrup or honey, sesame oil, olive oil, ginger, and garlic.
  3. In a large bowl, combine cooked noodles, cabbage, carrots, bell pepper, and green onions.
  4. Pour the dressing over the noodles and toss well to coat evenly.
  5. Top with sesame seeds and fresh cilantro before serving.
