Ingredients
- 8 ounces soba noodles
- 1 cup shredded red cabbage
- 1 cup julienned carrots
- 1 red bell pepper, thinly sliced
- 3 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons sesame seeds
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup or honey
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
Instructions
- Cook soba noodles according to package instructions. Drain and rinse under cold water to stop cooking and prevent sticking.

- In a large bowl, combine cooked noodles, cabbage, carrots, bell pepper, and green onions.
