Description

These refreshing boba smoothies combine chewy tapioca pearls with creamy fruit smoothies in honeydew, strawberry, and mango flavors. Perfect for a fun and colorful chilled treat.


Ingredients

  • 1 cup tapioca pearls
  • 6 cups water
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 cups coconut milk, plus more if needed
  • 2 tablespoons sugar
  • 4 cups frozen honeydew, cut into small pieces
  • 4 cups frozen strawberries
  • 4 cups frozen mangos

Instructions

  1. Bring 6 cups of water to a boil. Add tapioca pearls and stir until all the pearls float to the top. Reduce the heat and cook for 20 minutes, stirring every 2 to 3 minutes.
  2. Remove the pot from the heat, cover, and let the pearls sit for 25 minutes without opening the lid.
  3. Pour the pearls into a strainer and rinse with cold water until cool to the touch.
  4. Transfer the pearls to a bowl and stir in the brown sugar and honey until evenly coated.
  5. For the honeydew smoothie, blend the frozen honeydew, coconut milk, and sugar until smooth.
  6. Divide the sweetened boba evenly between 4 glasses and pour the honeydew smoothie over the top.
  7. For the strawberry smoothie, blend the frozen strawberries, coconut milk, and sugar until smooth.
  8. Divide the sweetened boba evenly between 4 glasses and pour the strawberry smoothie over the top.
  9. For the mango smoothie, blend the frozen mangos, coconut milk, and sugar until smooth.
  10. Divide the sweetened boba evenly between 4 glasses and pour the mango smoothie over the top.

Notes

  • Add extra coconut milk if the smoothie is too thick for blending.
  • Serve immediately for the best texture and flavor.
  • Wide smoothie straws work best for drinking the boba pearls.
  • You can swap coconut milk for almond milk or oat milk if preferred.
