Ingredients
- 4 large tortillas
- 4 eggs
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, chopped
- 1 tomato, diced
- 100 g cooked ham, diced
- 100 g grated cheese
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped
Instructions
- Heat olive oil in a pan over medium heat and sauté the onion and bell pepper until softened.
- Add the diced tomato and cook for another 2–3 minutes until slightly reduced.
- Stir in the diced ham and cook briefly until warmed through.
- In a bowl, whisk the eggs with salt and pepper, then pour into the pan.
- Cook the eggs, stirring gently, until just set and combined with the vegetables.
- Warm the tortillas in a separate pan or microwave.
- Divide the filling among the tortillas and sprinkle grated cheese on top.
- Fold the sides of each tortilla inward and roll tightly into a burrito.
- Serve warm, garnished with fresh parsley.
